米は山田錦と兵庫北錦を自家水田において栽培しております。水田の環境からこだわり、化学肥料は一切使用せず、レンゲによる緑肥と米ぬかの有機質肥料のみで土を作り、殺虫剤などでの病害虫の予防も一切使用せず、安心安全な酒米を収穫しています。酒造りでは吟醸クラスと同じお米を使用し、じっくりと発酵させ、そしてあえて十分に搾りきらないという贅沢な製法を用いています。使用する仕込水も敷地内にある井戸より良質の地下水を汲み上げています。手間暇かけて雑味を徹底的に除去する事により、飲んでうまいと思える味わいとなっています。
